Canada Red Rhubarb

Canada Red Rhubarb is a popular cold-hardy, heirloom variety of Rhubarb. Inside and out its stalks are vibrant red, keeping their red color even when cooked. Canada Red has sweet, tender flavor. It contains higher sugar levels than green or pink varieties, requiring less sugar when used in pies and baking. It grows well in the early spring, making spring the best time to harvest it. Canada Red Rhubarb has edible stalks, but its large leaves must be discarded as they are toxic.

 

Rhubarb Plant

Rhubarb is grown for its tart, edible stalks used in pies, pastries, and sauces. Its large leaves are toxic and must be discarded. To harvest Rhubarb twist and pull stalks from the base when they are about 12″ long. It requires rich, well-drained soil with plenty of compost. Rhubarb thrives in the early spring, cool weather, tolerating the hot summer sun.
